INGREDIENTS

2 cups almond flour
1 cup cassava flour
1 12 oz. package uncured bacon
3/4 cup ghee
4 eggs
1/8 cup garlic scapes, chopped
1 teaspoon baking powder
1/2 teaspoon Celtic or Himalayan salt

DIRECTIONS

Cook the bacon crispy (I like Beeler’s) and chop into bits (this can be done ahead of time). Preheat oven to 350°. Melt the ghee and add it to a mixing bowl with the flours baking powder and salt, stir. Whisk eggs and add them to the flour mixture. Add in the garlic scapes and bacon. Mix well. Line a muffin tin with natural parchment baking cups. Spoon the mixture into the cups to around 3/4 full. Bake for 15-20 minutes until a toothpick comes out clean.
